Ready to wow your guests at the aperitif of your Christmas dinner? The Galetou, star of Limousin aperitifs, is sure to cause a sensation! 🎉

Ingredients for crazy galetous: 1 liter water 💧 – 15g salt 🧂 – 10g baker’s yeast – 100g wheat flour – 400g buckwheat flour

The magic happens in 6 easy steps:

The day before, prepare the leaven by mixing the yeast with 100g of each flour. 🥣 On the day, add the rest of the ingredients and mix to obtain a batter a little thicker than pancake batter. Leave to rest for 3 hours at room temperature. Perfect for fine-tuning your final preparations! ⏳ Cook in a lightly oiled frying pan. 🍳 Garnish as desired: rillettes, local cheeses… Let your creativity do the talking! ✨

2. Chestnut Kir

Ingredients for a festive Limousin-style toast: 25 cl chilled dry white wine – 1 dash chestnut liqueur 🌰 – 1 dash cinnamon syrup – a few slivers of marrons glacés – 2 ice cubes 🧊

5-step preparation:

In a cocktail glass, wine glass or champagne flute, slip in one or two ice cubes. 🧊 Pour in a dash of chestnut liqueur, add the cinnamon syrup and top up with the chilled white wine.
Our little tip: place a piece of marron glacé delicately at the bottom of the glass. It’s the little extra that will surprise your guests!

3. Chestnut velouté

Continue your festive meal with a warm and comforting starter: chestnut velouté from Limousin. 🌰🍵

Ingredients for a velouté worthy of a Christmas meal: 500g Limousin chestnuts (the local star!) 🌰 – 1 onion 🧅 – 2 garlic cloves – 1 liter chicken stock – 100 ml crème fraîche – salt – pepper

5-step preparation:

Give your chestnuts a hot bath: incise them, then immerse them in boiling water for 20 minutes. Then peel them. 🌰
In a saucepan, sauté the minced onion and garlic in a little butter. 🧅
Add the chestnuts and chicken stock. Simmer for 20 minutes.
Now it’s time for the magic of the blender! Turn into a velouté, then add the crème fraîche. Add salt and pepper to taste. 🧂
For a crunchy finishing touch, serve with golden croutons. 🍞

4. Black pudding with caramelized apples

The dish

Treat yourself to this hearty, flavorful main course: black pudding with caramelized apples from Limousin. 🍎

Ingredients for a Limousin Christmas feast: 4 black puddings (the hero of your plate!) 🖤 – 4 apples from Limousin (Golden the local pride) 🍏 – 40 g butter 🧈 – 2 tablespoons brown sugar – 1 pinch cinnamon – Salt and pepper 🧂

5-step preparation:

Peel your apples and cut into elegant wedges. 🔪🍎 In a frying pan, brown the butter over medium heat. Add the apples and sprinkle with brown sugar. Let them brown for 10 minutes, stirring occasionally, add a dash of cinnamon. Meanwhile, in another frying pan, cook the black puddings over a low heat for 8 to 10 minutes. Turn gently. 🕰️ Arrange the black pudding and caramelized apples side by side. A pinch of salt and pepper and you’re done. 👅 Our little tip, serve warm with mashed potatoes. 🥔

5. Apple and cinnamon flognarde

Dessert

Finish in style with an Apple and Cinnamon Flognarde 🍏

Ingredients: 4 apples from Limousin (Golden) 🍏 – 100 g flour – 3 eggs 🥚- 50 g powdered sugar – 30 g melted butter – 250 ml milk 🥛 – 1 teaspoon powdered cinnamon – 1 sachet vanilla sugar – 1 pinch salt 🧂- Icing sugar

Preparation in 9 steps:

Preheat your oven to 180°C. Peel your apples and cut into thin strips. In a bowl, beat the eggs with the sugars until frothy. Add the flour and salt. Mix well. Gradually blend in the melted butter and milk. Add the cinnamon. Arrange your apple slices in a buttered dish, then pour the batter over them. Bake for 35-40 minutes. Once out of the oven, sprinkle with powdered sugar. Our little tip: serve warm. 👅
