Traditional production of Le Toinou cookies in Saint-Yrieix-sous-Aixe. Toinou is a specialty of the Limousin region. It's a soft biscuit for sharing. Legend has it that it comes from the uncle known as "Le Toinou", who liked to enjoy his wife's recipes, made with local ingredients. Chestnuts, hazelnuts, walnuts and almonds, all blended together, giving the softness and flavor that uncle adored.
