Organic snail farming. The snails grow in a park with vegetation adapted to their diet (mustard, facelia, etc.), supplemented by cereals. The snail is the gros gris (Helix espersa maxima), a cousin of the petit gris found in our region. Farming follows the snail's cycle: spat are placed in pens in spring, and the snails are harvested in October.
