The bouillon is a typically Parisian tradition dating back to 1860: a place where workers at the halles (covered market) could eat at a modest price. The special feature: an art nouveau room, as is the case here! Jérôme Ivars and Cathy Ivars have used this unique decor to create a "Limousin" bouillon using regional products.
