Christmas recipe with chestnuts

Ingredients

  • 1 onion
  • 320 g button mushrooms
  • 490 g cooked Limousin chestnuts
  • 200 g raw duck foie gras
  • 40 cl milk
  • 60 cl liquid cream

The chestnut tree is the emblematic tree of the Limousin. Nicknamed the “breadfruit tree”, it has provided the region’s food and economic base for centuries.

Preparation

Sauté chopped onion and mushrooms for 3 minutes.
Add 400 g chestnuts and mix well. Season with salt and pepper.
Pour the milk and cream over the mixture and cook over a low heat for 10 minutes.
Meanwhile, dice the raw liver and brown in a frying pan on both sides. Season with salt
Blend the cream of mushroom and chestnut mixture.

Dressing the plates

Serve in soup plates ( Limoges porcelain, of course! 😉 ), pour in cream of mushroom and chestnut soup, then add the diced pan-fried liver and crumble 90g of chestnuts for decoration. Sprinkle with a few sprigs of chopped parsley and you’re done!
