Boucherie La Paupiette Enchantée

La Paupiette Enchantée, a traditional butcher's shop, offers a wide variety of meats (pork, beef, lamb, poultry) from farms in and around Saint-Yrieix. One of its specialties is Le Saint-Yrieix, a traditional young bovine (regulated local production), with tender, pinkish meat. The butchers, Pierre Mathieu and Léo Négrier, select most of the animals for sale directly from the farm. Butchery specialties: andouilles, boudins, pâtés, pâtés de tête, cooked sausages, dry-cured hams, Limousin crickets, pork rillettes... and of course, the establishment's benchmark: the paupiette!
